CSA: Community-Supported Agriculture, is an important way to achieve farm-to-table nutrition. We started camp talking about ideas in eating, and the farm-to-table movement is an important idea in eating a whole food, plant-based diet and in keeping one's carbon footprint small. Eating local produce cuts down on transportation costs and pollution while building up the local economy and local health.
So Wednesday we visited Van Thun Farms in Monmouth Junction south of New Brunswick.

Below we see Tim of Van Thun's directing the stocking of the baskets that the shareholders in the farm get each week. Staff were loading corn on the cob, tomatoes, pickling cucumbers, and eggplants into the baskets while we were there, but we left before they finished to go see the animals.
